Saltanat Su Böreği Line

Su Böreği Line consists of 4 parts.

  1. DOUGH ROLLING UNIT
  2. COOKING UNIT
  3. SHOCK UNIT
  4. CHILLER

As the dough rolling unit, we have improved the baklava dough rolling machine to make it suitable for börek dough rolling. Our goals in using this machine are;

  1. To ensure that the boiling water is not too dirty by using less starch.
  2. To produce dough faster.
  3. The dough rolling unit consists of fewer parts, so there will be fewer possibilities of breakdowns.

Cooking Unit

  1. It is manufactured according to the customer's capacity options of 1.5 - 2.5 - 4 and 6 meters in size.
  2. The cooking unit works with hot water between 320 and 600 liters.
  3. The water heating process is done with a specially designed atmospheric burner group fueled by natural gas.
  4. The modular belt used is a market-available belt. (Regardless of the manufacturer, it can easily be obtained from the market for future manufacturing.)
  5. The water level is electronically controlled and cannot run without water.
  6. Our most important feature is that when the manufacturing is finished and the machine is put on stop, the parts that need to be cooled down on the machine cool down and the machine stops automatically.

Shock Unit

  1. It is 6 meters in length.
  2. It contains 250 liters of water inside.
  3. There is a pump that constantly circulates the water.
  4. There are 2 filters that clean the water during circulation.
  5. 1 heat exchanger provides the cooling of the circulated water. (Thus, the dough coming from boiling at 80 - 83 degrees is cooled by a sudden shock in 10-degree water.)
  6. With the blades mounted on the modular belt, the boiled and cooled dough is portioned in desired sizes.

Chiller

  1. It is our own production. Therefore, we provide all services and technical support related to the machine to the customer.
  2. 8 HP compressor is used.
  3. It produces an average of 420 liters of cold water.

Su Böreği, one of the unique flavors of Turkish cuisine, offers a delightful taste with its finely prepared dough and filling. Prepared by placing various ingredients such as cheese, spinach, or minced meat between the thin and layered sheets rolled out delicately, su böreği is not only an indispensable part of traditional Turkish tables, but also a blessing shared with loved ones on special occasions and gatherings.

When you give your self-made dough to Saltanat Food Machinery's dough rolling machine and turn it into sheets, you get a quality sheet of dough that is thin and elastic, suitable for su böreği, which in turn preserves the structure of the börek and enhances its flavor.

When you give the rolled dough to Saltanat Food Machinery's cooking line, you have boiled the dough at a fixed temperature you have determined and at the right cooking time.

You make the boiled dough ready for use by cooling the boiled dough in the shock chamber at a water temperature of 5-10 degrees that you have determined.

Note: The water of the shock chamber is produced by the chiller systems, manufactured by Saltanat Food Machinery.
